St Patrick’s Day Charcuterie Board Guide: Healthy Edit

This post shows you how to make a St Patrick’s Day themed snack board.

If you’re not planning on hitting the pub this St Patrick’s Day – and are having a home do instead – this post is for you. A little shin dig for St. Patrick’s Day is the perfect excuse to whip up a show-stopping snack board that’s fresh, healthy-ish, and fun.

My True Style

I wanted to make a Charcuterie board for St Patrick’s Day, but it had to be: healthy, cheap and easy. So I choose to rely a lot on vegetable sticks – which have great bright colours and are healthy, easy and cheap. I then added green grapes and a few extra festive items – to complete the board. I got the idea of filling the bell pepper with dip from The Baker Muma (to create a themed shamrock-shaped element) and I was happy with how it turned out (you can see the before image, where the bell pepper hasn’t been filled yet.)

In addition to the green veggies, grapes, and dip, I included water crackers to go with the dip. I also added gold chocolate coins to represent the “treasure at the end of the rainbow” vibe. The small “pot of gold” styled dish is filled with brightly coloured green pickled onion. Honestly, I don’t think anyone will eat them without something complementary, like cubed cheese, but I included them mostly for aesthetics, as they are such a bright green. If I was to make it again, I would add cubed cheese and probably some cured meats for more variety and to make it more cohesive from a flavour perspective.

I picked up the scoops on an impulse and they are purely aesthetic – I tried incorporating them on the board itself and it just didn’t work – they weren’t sitting right.

What I was most happy about with this board is that it’s mostly veggies and fruit, so it looks and feels like a treat, but you don’t feel over indulged afterwards

The second most satisfying part is that it required no cooking —just chopping, arranging, and a bit of creative placement. I was able to throw it together pretty quickly.

Ingredients

Green Focused Fresh Produce:

  • 2 large bunches seedless green grapes (about 1.5–2 lbs total)
  • 2 Small Lebanese cucumbers – (sliced in half and then into sticks)
  • 1 bunch of celery (cut into sticks)
  • 2 – 3 large carrots (peeled and cut into sticks)
  • 1 large green bell pepper (for the shamrock dip bowl)
  • 1 green apple (sliced in half and into small slices)

Crunchy Bits:

  • 2–3 sleeves of round crackers (I used water crackers)

Optional extras: sugar snap peas, broccoli florets, cubed cheese, green olives

Savory and Dip:

  • 1–2 cups creamy dip (I used herbed cream cheese, but store-bought ranch, spinach dip or humus also work)
  • Fresh herb sprig (I used parsley, but you could also use the leaf from celery) for garnish
  • Green Pickled Onion

Festive Touches:

  • 1–2 bags gold-wrapped chocolate coins
  • Themed accessories (I used Small green plastic scoops/shovels)
  • Optional: green chocolates or candies (I had some green foil covered choclates, but green M&Ms or wasabi peas are good substitutes)

Tools:

  • Large rectangular wooden cutting board (20×14 inches or bigger works best)
  • Sharp knife and cutting board
  • Small bowl (if not using the pepper as the holder)
  • Tiny Pot – for Pickled Onions
  • Tooth picks (for onions, if using)

Step-by-Step Instructions

Prep Your Shamrock Dip Bowl. This edible green bell pepper “pot” is what makes your board instantly recognizable as St. Patrick’s themed.

  • Choose a large, firm green bell pepper with a nice four-lobed shape.Slice off the top (about ½ inch down) to create a lid.
  • Remove the seeds and white membranes inside. If the natural lobes don’t form a perfect shamrock, carefully trim the sides with a small knife to accentuate three or four rounded “leaves.” (Many peppers naturally look shamrock-like when hollowed!)
  • Rinse and pat dry.
  • Fill with your dip, then garnish the top with a small herb sprig (I used parsley) or celery leaf “stem” for extra charm.
  • Substitution: If shaping feels tricky, cut three heart shapes from the pepper sides and arrange them around a mini cucumber stem for a DIY shamrock accent instead

Chop and Prep the Veggies

  • Wash everything thoroughly.
  • Cucumber: Sliced into 4-6 inch sticks
  • Celery: Cut into 4–6 inch sticks
  • Carrots: Peeled and cut into sticks
  • Grapes: Leave in small clusters – I used 2.
  • Arrange components in piles ready to place.

Build the Board – Start with Structure

  • Place your shamrock dip bell pepper in the center or slightly off-center as it will be the focal point.
  • Drape green grape clusters — I chose to place one bunch in the centre and one on the end for balance (they should go on second because of how much volume they take up)
  • Fan out cracker rounds in curved sections in strategic “random looking” places
  • Create height and flow: Bunch celery sticks in evenly spaced locations, on alternating angles.
  • Add cucumber spears to evenly spaced gaps to create a balanced spread of different tones of green
  • Tuck carrot sticks in the middle for orange pops of contrast (they pick up on the orange from the flag)

Add the Magic: Gold & Green Accents

  • Scatter gold chocolate coins generously—pile small stacks near the edges, tuck singles into veggie gaps, and dot them in gaps.
  • Place 2–4 green plastic scoops playfully for decoration.
  • Sprinkle any tiny green chocolates or peas for extra whimsy.

Final Touches & Pro Tips

  • Step back and fill gaps: Add more grapes, crackers or gold coins to avoid empty spots.
  • Keep it fresh: Assemble 1–2 hours before serving; cover with plastic wrap and refrigerate if needed.
  • Common mistakes to avoid: Don’t overcrowd early—start sparse and build. Use odd numbers for natural flow (3 clusters, 5 coin piles).

Variations

  • Go rainbow by adding red/orange/yellow veggies at one end.
  • Add cheese cubes or Irish cheddar for heartier appeal and to complement the pickled onions.
  • Add green olives for another savory green element.
  • Gluten free version – use GF crackers and check any packaged foods for gluten (and exclude/substitute)
  • Vegan version – use a vegan dip and vegan chocolate coins (or exclude coins if unavailable)
  • A sweet version with green cookies and rainbow candies, like seen on Buns In My Oven

  • Use two apples to create the shamrock and use letter shaped cookie cutters to cut “Happy St Patrick’s Day” out of cheese, as done by Amanda Warren
  • Cut a shamrock into a brie wheel and fill with jam or marmalade in a contrasting colour, as seen on Meals with Maria

This board looks impressive but takes under 30 minutes once prepped – the grapes quickly add volume and fill the board, expediating the assembly time.

Square Board Version

The shape of the board with effect the arrangement of the ingredients. I made a square board variation and I’m really happy with how it turned out!

My True Style

I used a tzatziki dip in the centre, with some parsley for garnish.

I also used added some muesli and raisin cookies. I also found some cute little orange peppers and a yellowish-orange tomatoes to bring the orange from the Irish flag to the board. I also added some long green peppers for decoration. I also added some cubed cheese to this variation.
